Shrimp Gumbo

  1. In iron skillet, over low to medium heat, heat up oil until hot.
  2. Stir in flour, stirring continuously until dark brown.
  3. Add 2 Tbsp. water, stirring until you paste has the consistency of peanut butter.
  4. Meanwhile, bring to boil, 2 to 3 quart of water in large pot.
  5. Add rue to pot and stir in until mixed.
  6. Add onion and celery.
  7. Cook 10 to 15 minutes, until onions turn clear.
  8. Add shrimp and garlic.
  9. Cook 5 more minutes, seasoning with Gumbo Fil and Tony's to taste.
  10. Serve by pouring over servings of rice and garnish with chopped green onions.
