Courgettes With Tomatoes And Herbs

  1. Bring the Courgettes to the boil, in salted water, and cook for 3 minutes.
  2. Drain and place in an ovenproof dish.
  3. Heat butter; add tomatoes, garlic or onion, herbs and salt and cook until a thickish mixture forms.
  4. Taste and adjust seasoning; spoon over Courgettes.
  5. Sprinkle with cheese and breadcrumbs and bake at gas mark 4 (325u0b0) for 20 to 25 minutes.
  6. Serve hot by itself, or with beefburgers, chops or steaks.
