Old-Fashioned Peanut Cookies

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, stir together flour, cornstarch and baking soda.
  3. In a large bowl, beat butter for 10 seconds.
  4. Beat in sugars.
  5. Add eggs, vanilla and salt. Beat until thick and light, about 1 min.
  6. Add peanut butter.
  7. Stir in flour mixture.
  8. Using 1 1/2 Tbsp. dough for each cookie, roll into balls and arrange on a baking sheet, leaving 2-3 in. between each one.
  9. Dip a fork into sugar and press on top of each cookie in two directions to flatten and make a crosshatch design.
  10. Bake until golden brown around the edges, about 12 min.
  11. Transfer to a rack and cool.
  12. Makes about 40 cookies.
