Apple Cider Waffles With Caramelized Apples

  1. Melt butter in a skillet over medium-high heat. Add apples and brown sugar and cook for about 5 minutes until the apples are browned. Lower the heat to medium low and cook an additional 5 minutes until the apples are softened, but still have a bit of crunch on the inside.
  2. Mix the dry ingredients in a bowl.
  3. Mix the apple cider, egg yolk, oil, and honey in another bowl or large cup.
  4. Beat the egg whites until they form stiff peaks
  5. Add the wet ingredients to the dry and stir well to combine. Fold in the egg whites. Cook in your waffle iron according to the the manufacturers directions. Mine was set to medium and cooked for about 4 minutes.
