Raw Strawberry, Lime & Macadama Slice

- 8 medjool dates, pitted
- 1 cup strawberries
- 0.25 banana
- 2 cups macadamia nuts
- 3 tablespoons coconut oil
- 3 tablespoons chia seeds
- 0.5 cups desiccated coconut
- 1 teaspoon vanilla extract
- icing
- 1 cup macadamia nuts
- 0.5 cups melted coconut oil
- 0.5 cups maple syrup
- 4 tablespoons lime juice
- 1 teaspoon vanilla extract
- Line a baking tray with baking paper, I used a 24cm x 24cm cake tin.
- Blend the dates in a food processor until smooth. Add remaining base ingredients and pulse until just combined. The mixture should stick together like a dough, if not, add a tablespoon of water and pulse again.
- Transfer the mixture to the lined tray and press down evenly to form a base, place in the freezer to set.
- Wash and dry the processor, add all of the icing ingredients and blend until smooth and creamy.
- Remove tray from freezer and pour over icing, set in the fridge or freezer. Once the icing is firm, cut into 16 squares and store in the fridge or freezer.
