Magic Pizza With Ramps And Anchovies

  1. Disolve the yeast in warm water and let stand about 10 minutes.
  2. Mix the flour, olive oil, salt , pinch of sugar, and yeast mixture to form a dough. Punch around and then cover for about 30 minutes.
  3. Form into a round.
  4. Flour or cornmeal a baking stone or pan. Preheat the oven to 400 degrees
  5. After the dough is shaped into a suitable pizza round, spread the magic sauce on it. Then spread the mozzarella cheese on it.
  6. Next, arrange the white anchovies on the round.
  7. Next, arrange the sauteed ramps on the round.
  8. Next, scatter the green olives on the round.
  9. Put the pizza in the preheated oven. If you have a real pizza oven or wood fire oven...lucky you!
  10. Bake for about 15 minutes. Watch closely so the pizza doen't burn.
  11. Caution: if you are using a peel, be sure to have enough cornmeal under the pizza when you slide it onto the stone or baking sheet...I had a very unfortunate accident when I didn't!
  12. *****MAGIC SAUCE: Put a 28 oz, can of San Marazano or home canned whole tomatoes in a large pot with 1/2 cube of butter and a peeled sweet yellow onion that is cut in half. Simmer for about an hour stirring often. Oh..then.throw away the onion.
