Spring Toast
- Pea Hummus
- 2 cups cooked sweet peas
- 1 tablespoon tahini
- 2 cloves garlic
- 1 tablespoon olive oil
- juice half of one lemon
- 1 pinch sea salt
- 1 handful cilantro and/or mint
- Spring Toast
- 2-3 tablespoons pea hummus, recipe above
- 1 piece hearty gluten-free toast
- 1/2 avocado, sliced
- 1/4 cup sprouts of choice
- 1 pinch sea salt
- 1 dash good quality olive oil
- Place all ingredients in food processor. Blend until smooth.
- Taste for seasoning and adjust as necessary.
- Place in sealed container. Store covered in refrigerator for 2-3 days.
- Toast bread.
- Smear pea hummus over toast, then place sliced avocado on top.
- Sprinkle with sprouts and sea salt. Drizzle with olive oil and eat immediately.
