Honey-Potato Batter Bread

  1. Dissolve yeast in warm water in a large bowl; add honey and let stand 15 minutes.
  2. Stir in milk and next 3 ingredients. Gradually add 3 cups flour, one cup at a time, beating well after each addition.
  3. Stir in enough of the remaining 1 cup flour to make soft dough.
  4. Place dough in 10-inch tube pan coated with cooking spray.
  5. Cover and let rise in a warm place (85u0b0) free from draft 1 hour or until doubled in bulk.
  6. Bake at 350u0b0 for 45 to 50 minutes until loaf sounds hollow when rapped.
  7. Cool in pan 10 minutes.
  8. Remove from pan and cool on rack.
  9. Yields 24 servings (102 calories per slice).
