Honey-Potato Batter Bread
- 1 pkg. dry yeast
- 1/2 c. warm water (105~ to 115~)
- 3 Tbsp. honey
- 1 (12 oz.) can evaporated skimmed milk
- 1/2 c. instant mashed potatoes
- 2 Tbsp. margarine, melted
- 1/2 tsp. salt
- 4 c. all-purpose flour, divided
- vegetable cooking spray
- Dissolve yeast in warm water in a large bowl; add honey and let stand 15 minutes.
- Stir in milk and next 3 ingredients. Gradually add 3 cups flour, one cup at a time, beating well after each addition.
- Stir in enough of the remaining 1 cup flour to make soft dough.
- Place dough in 10-inch tube pan coated with cooking spray.
- Cover and let rise in a warm place (85u0b0) free from draft 1 hour or until doubled in bulk.
- Bake at 350u0b0 for 45 to 50 minutes until loaf sounds hollow when rapped.
- Cool in pan 10 minutes.
- Remove from pan and cool on rack.
- Yields 24 servings (102 calories per slice).
