Pecan Slices
- 1 c. all-purpose flour
- 1/2 c. butter
- 2 eggs, beaten
- 1 1/2 c. brown sugar
- 1 1/2 c. pecans, chopped
- 2 Tbsp. flour
- 1/2 c. coconut (optional)
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. vanilla
- 1 1/2 c. confectioners sugar
- lemon juice
- Sift flour before measuring.
- Blend 1 cup flour and the butter to a smooth paste.
- Spread this mixture in a 9 x 12-inch pan; bake in a 350u0b0 oven for 12 minutes.
- Spread the baked dough with the following mixture:
- combine beaten eggs, brown sugar, pecans 2 tablespoons flour, coconut (if desired), baking powder, salt and vanilla.
- Bake at 350u0b0 for 25 minutes.
- Stir lemon juice into confectioners sugar a little at a time, until spreading consistency, then ice cookies after they have cooled.
- Cut into squares or bars.
