Quick Chicken Souvlakis With Roasted Pepper Hummus
- For the Souvlakis
- 400 grams chicken thighs, boneless, skinless
- 1/2 teaspoon dried oregano
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 30 milliliters olive oil
- 15 milliliters lemon juice
- 1 piece Zest of 1 lemon
- 3 pieces whole wheat tortillas (gluten-free optional)
- For the Hummus
- 100 grams garbanzo beans/chickpeas (canned)
- 100 grams roasted bell pepper
- 6 grams garlic, crushed
- 30 milliliters lemon juice
- 30 milliliters olive oil
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Cut chicken thigh fillets into cubes.
- In a bowl, combine olive oil, lemon juice, lemon zest, dried oregano, salt, and pepper. Add in chicken and toss thoroughly.
- Thread chicken into skewers and cook in a grill pan on high heat for 4 minutes per side.
- While chicken is cooking, prepare hummus. Add all ingredients to a food processor and pulse until smooth.
- Serve with warm wheat tortillas.
