Shoe Peg Salad
- 1 (16 oz.) can Shoe Peg corn
- 1 (16 oz.) can French-style green beans
- 1 (16 oz.) can tiny peas
- 1 (2 oz.) jar chopped pimento
- 1 onion, sliced into rings
- 1 green bell pepper, chopped
- 1 c. chopped celery
- 1 (8 oz.) can sliced water chestnuts, drained
- 1/2 c. wine vinegar
- 1 c. sugar
- 1/2 c. oil
- salt to taste
- Drain corn, beans, peas and pimento. Combine all vegetables in salad bowl.
- Mix vinegar, sugar, oil and salt in small bowl. Add to vegetable mixture.
- Mix well.
- Marinate in the refrigerator overnight.

- 182 calories, total fat 8 g, 36% calories from fat, 3 g protein, 28 g carbohydrates, 3 g fiber, 0 mg cholesterol and 221 mg sodium.
