Pepper Steak
- 1 1/2 lb. round steak, cut 1/2-inch thick
- 1/4 c. all-purpose flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/4 c. cooking oil
- 1 (8 oz.) can tomatoes
- 1 3/4 c. water
- 1/2 c. chopped onion
- 1 small clove garlic, minced
- 1 Tbsp. beef flavor gravy base
- 1 1/2 tsp. Worcestershire sauce
- 2 large bell peppers (large dice)
- hot cooked rice
- Cut steak in strips.
- Combine flour, salt and pepper.
- Coat meat strips.
- In large skillet, saute meat in hot oil until brown on all sides.
- Drain tomatoes; reserve liquid.
- Add tomato liquid and water to meat.
- Add onion, garlic and gravy base.
- Cover and simmer for 1 1/4 hours, until meat is tender.
- Uncover.
- Add Worcestershire sauce.
- Add bell peppers.
- Cover and simmer 5 minutes.
- Add drained tomatoes.
- Cook 5 minutes more.
- If thicker sauce is desired, thicken with water and flour mixture.
- Serve over hot rice.
