Lamb Shank Italian Way
- 2 tablespoons coconut oil or extra virgin olive oil
- 1/2 teaspoon Pinch of sea salt and organic GF ground black pepper
- 2 pieces organic celery stalks, cut lengthwise
- 1 tablespoon organic GF sweet paprika
- 1 piece organic GF bay leaf
- 3 tablespoons organic pure tomato paste
- 2 pieces lamb shanks
- 3 pieces organic carrots, cut lengthwise
- 1 piece organic sweet onion, sliced
- 2 pieces garlic cloves chopped
- 1 cup water
- 1/4 cup red wine
- 2 teaspoons fresh organic rosemary
- 2 teaspoons organic GF dried rosemary
- 1 piece organic tomato, chopped
- Preheat oven to 350 F
- Generously salt and pepper the lamb shank
- In a large creuset pot add coconut oil and lamb shank and brown on all sides, remove from pot and keep warm
- Add the vegetables and paprika and saute for 3 minutes, return lamb shank to the pot and add remaining ingredients and stir
