German Crushed Banana Cake
- 1/2 c. (1 stick) butter or margarine at room temperature
- 1 1/2 c. sugar
- 2 eggs, separated
- 3 medium size crushed bananas
- 1/2 tsp. vanilla extract
- 1 tsp. baking soda
- 4 Tbsp. sour milk *
- 1 1/2 c. flour
- 1/2 tsp. ground cinnamon
- 1/2 c. chopped nuts
- With an electric mixer, beat butter and sugar until light and fluffy.
- Add egg yolks, bananas and vanilla.
- In a cup, stir baking soda into sour milk until dissolved.
- Add to butter mixture.
- Stir or sift together flour and cinnamon; add to butter mixture.
- Beat egg whites until stiff but not dry.
- Stir nuts into batter, then fold in egg whites.
- Pour into 2 greased 9-inch round cake pans. Bake in a preheated 350u0b0 oven until done, 35 to 40 minutes.
- Cool in pans 5 minutes, then turn out onto a wire rack.
