Glazed Coffee Cake
- 1 pkg. yellow cake mix
- 1 small pkg. vanilla instant pudding
- 3/4 c. vegetable oil
- 3/4 c. water
- 4 eggs
- 1 tsp. vanilla extract
- 1/4 c. sugar
- 2 tsp. cinnamon
- 1/4 c. chopped pecans
- 1 c. confectioners sugar
- 3 Tbsp. milk
- 1/2 tsp. vanilla
- Preheat oven to 350u0b0.
- Combine cake mix, pudding mix, oil and water in mixer bowl.
- Mix well.
- Add eggs, one at a time, beating for 6 to 8 minutes. Beat in 1 teaspoon vanilla.
- Spoon 1/3 of the batter into greased and floured Bundt pan. Mix sugar, cinnamon and pecans in small bowl.
- Layer pecan mixture and remaining batter, 1/2 at a time, in
- prepared pan.
- Bake for 45 minutes. Cool on rack for 8 minutes.
- Invert on serving plate. Combine remaining ingredients in small bowl and mix well. Spoon over warm coffee cake.
- Serves 12.
