Herbed Green Beans
- 1/2 lb. fresh green beans
- 1/2 c. water
- 1/3 c. chopped green pepper
- 1/4 c. sliced green onions
- 1 Tbsp. vegetable oil
- 1 medium tomato, peeled and diced
- 3/4 tsp. minced fresh basil or 1/4 tsp. dried whole basil
- 1/2 tsp. salt
- 1/4 tsp. sugar
- 1/4 tsp. minced fresh rosemary or 1/8 tsp. dried whole rosemary
- Wash beans; trim ends and remove strings.
- Cut beans into 1 1/2-inch pieces.
- Combine beans and water in a 1 1/2-quart casserole.
- Cover tightly with heavy-duty plastic wrap; fold back a small edge of wrap to allow steam to escape.
- Microwave at High 9 to 10 minutes, or until crisp-tender, stirring after 3 minutes. Let stand, covered, 2 minutes; drain.
- Place green pepper, onions and oil in a small bowl.
- Cover with heavy-duty plastic wrap; microwave at High 3 to 4 minutes, or until tender.
- Add green pepper mixture, tomato and remaining ingredients to beans; mix well.
- Cover and microwave at High 2 to 3 minutes, or until thoroughly heated.
- Yields 4 servings.
