Russian Honey Gingerbread Cookies ( Pryaniki )

  1. Preheat oven to 200 C (390 F). Mix all the spices together.
  2. Heat honey in a small saucepan over medium heat. Quickly add spices and half of the flour to the saucepan. Turn off the heat and move the saucepan to the countertop. Let it cool slightly.
  3. Add the remaining cups flour, egg yolks, butter and baking powder. Knead dough by hand for at least 25 minutes.
  4. Form small cookies (2 inch in diameter and 0,5 inch thick). Place cookies onto a baking tray lined with grease proof paper. Bake for 10 minutes until pale gold and a skewer inserted in the middle of the cookie comes out clean). Don't over bake! Cookies should be slightly soft.
  5. Make the icing: stir together icing ingredients to creamy consistency (add more liquid to thin out or add more powdered sugar to thicken to desired consistency)
  6. Place warm cookies in a single layer into a plastic box with a lid (or a large saucepan). Pour icing on cookies, cover the box and shake it up. Transfer your cookies to a wire rack. Allow to cool for 1-2 hours and serve.
