Mediterranean Meatball Tacos With Tzatziki, Feta And Arugula
- For the meatballs:
- 1 pound lean ground beef
- 1 egg, beaten
- 1/4 cup Panko breadcrumbs
- 3 garlic cloves, minced
- 1/4 cup red onion, small dice
- 1 teaspoon dried oregano (Mexican preferred)
- 2 teaspoons ground cinnamon
- 1 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 8 flour tortillas
- 1 recipe Tzatziki sauce (see below)
- feta cheese, crumbled
- arugula
- fresh dill, chopped for garnish
- Tzatziki Sauce
- 1 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 1/2 cucumber, peeled, seeded and minced or grated
- 1 tablespoon fresh dill, chopped
- 1/2 teaspoon ground black pepper
- In a large mixing bowl, mix the ground beef with the next 9 ingredients. Shape into 24 small meatballs (approximately 1-inch diameter).
- Place on a baking sheet lined with parchment paper and bake at 375 degrees for 20 - 25 minutes, or until done.
- In the meantime, heat flour tortillas on a comal or in a heavy skillet. Keep warm.
- Serve 3 meatballs in a flour tortilla. Top with Tzatziki sauce, crumbled feta cheese, arugula and fresh dill.
- Mix all ingredients and refrigerate until ready to use. This sauce is better if made the day before to allow flavors to develop.
