Fruit And Nut Cranberry Relish
- 3 c. fresh or frozen cranberries
- 1 orange (unpeeled), quartered and seeded
- 1 tart apple (unpeeled), cored
- 3/4 c. sugar
- 1/8 tsp. salt
- 1/4 tsp. cinnamon, ground
- 1/2 c. golden seedless raisins
- 1/2 c. chopped dried apricots
- 1/2 c. chopped pecans
- 1 oz. raspberry or orange liqueur (optional)
- Coarsely chop cranberries, apple and orange in food grinder or food processor.
- Stir in sugar, salt and cinnamon; set aside.
- Cook raisins and apricots in 1/2 cup water over medium heat until raisins are plump (about 5 to 10 minutes); drain.
- Stir raisins, apricots, pecans and liqueur (if desired) into relish.
- Refrigerate overnight to blend flavors.
- Store refrigerated; keeps well (about 2 weeks).
- Makes about 1 quart relish.
- Serve with poultry or ham.
