Moro De Frijoles(Rice And Beans Cooked Together)
- 1 lb. rice
- 3 c. water
- 1 can beans
- 1 Tbsp. salt
- 2 strips bacon
- 1 oz. fresh coriander or 1 tsp. dry coriander
- 2 Tbsp. onions
- 1 tsp. garlic
- 1 small green pepper
- 3 small red tomatoes
- 1 tsp. vinegar
- 1 tsp. tomato paste
- 4 Tbsp. oil
- Clean and wash rice.
- Set aside.
- Mix bacon, tomatoes and stir-fry in 1 tablespoon of oil.
- Add onions, garlic, coriander, pepper, oregano, vinegar, salt and tomato paste.
- Stir-fry and add a bit of water, if necessary.
- Add beans and stir 3 minutes. Add rice and keep stirring for an other few minutes.
- Add hot water and let cook.
- When rice is tender, add the remaining oil and cook gently for 5 minutes.
- Serve with chicken or beef stew, Dominican style and avocado and tomato salad.
- Serves 6.
