White Beans With Herbes De Provence

  1. Simmer the beans in water until done -- how long this takes depends on the age and dryness of the beans.
  2. Saute the sliced garlic in the olive oil until softened. Add all the other vegetables, stirring to coat evenly in the oil. Add half of the herbes to the vegetable mixture.
  3. Add the beans and their cooking water; simmer for an additional 15-20 minutes until the potatoes are done. Sprinkle with remaining herbes and drizzle with olive oil.
