Brandied Raisin-Applesauce Muffins
- 1/2 c. raisins
- 2 Tbsp. brandy or apple juice
- 1 1/3 c. all-purpose flour
- 3/4 tsp. baking powder
- 3/4 tsp. apple pie spice
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 beaten eggs
- 2/3 c. applesauce
- 1/3 c. margarine or butter, melted
- 1/4 c. packed brown sugar
- In a small bowl, combine raisins and brandy or apple juice. Let stand 10 to 15 minutes.
- Grease 12 (2 1/2-inch) muffin cups, or line with paper bake cups; set aside.
- In a large mixing bowl, stir together the flour, baking powder, apple pie spice, baking soda and salt.
- Make a well in center of ingredients.
- In another bowl, combine eggs, applesauce, melted margarine or butter, brown sugar and the raisin mixture.
- Add the egg mixture all at once to the well in the flour mixture.
- Stir just until moistened (batter should be lumpy).
- Spoon batter into prepared muffin cups, filling each 2/3 full.
- Bake in a 400u0b0 oven for 20 to 25 minutes, or until golden.
- Remove muffins from pan; cool slightly on a wire rack. Serve warm.
- Makes 12.
