Eye Of Round Stuffed

  1. To Stuff:
  2. Make hole in center of eye of round by twisting small knife through roast.
  3. (Enter from both ends.)
  4. Season hole with salt.
  5. Stuff sausage into hole.
  6. Heat 1 teaspoon shortening or oil and braise eye of round until it is brown on all sides.
  7. Mix onions, bay leaves, pepper, garlic, oregano, paprika and 3 teaspoons shortening or oil.
  8. Rub mixture over the surface of roast.
  9. Place in a deep pan or baking dish.
  10. Add the water and marinate overnight in the refrigerator.
  11. Remove and roast in 325u0b0 oven, uncovered, for 1 hour.
  12. Cover and roast for approximately 2 1/2 hours.
  13. Remove from oven.
  14. Carve and serve.
  15. (Cooking time for eye of round roast is 70 minutes per pound.)
