Chewy Crispy Oatmeal Cookies With Chocolate Chips And Dried Cherries
- 1 cup light brown sugar
- 3/4 cup unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 3/4 cup flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 3 cups rolled or old fashioned oats
- 1 cup dried cherries
- 1 cup bittersweet chocolate chips
- Preheat oven to 350 degrees. Beat butter and sugar until creamy in a large bowl.
- Add egg and vanilla and beat to combine.
- Whisk together flour, salt, baking soda, and cinnamon in a medium bowl.
- Add dry ingredients to the wet and beat to combine.
- Stir in oats, cherries, and chocolate chips. This will take some doing, but the batter should combine to a sticky, chunky mass of oaty cookie dough.
- Line two baking sheets with parchment paper. Dollop the dough in heaping tablespoons in evenly spaced mounds on the sheets.
- Wet your fingers and compress the dough into little domes. They don't need to be perfect. The dough won't expand too much as they cook, so don't worry if the cookies seem close together.
- Bake 12 - 15 minutes.
