Cherry Cobbler

  1. Preheat oven to 375u0b0.
  2. Save 6 cherries with stems for garnish. Remove stems and pits from all other cherries.
  3. In 2-quart saucepan, stir water and cornstarch until blended.
  4. Add cherries, lemon peel, cinnamon, 1/4 to 1/3 cup sugar (depending how sweet cherries are) and salt.
  5. Over medium heat, cook cherries until soft and mixture thickens and boils, stirring frequently.
  6. Spoon cherry mixture into custard cups.
  7. Mix flour, powder, oil, egg, 1/4 cup sugar and 1/8 teaspoon salt until blended.
  8. Spoon batter on top of cherry mixture.
  9. Bake 15 minutes or until top is golden.
  10. Serve with drop of whipping cream and garnish with cherry.
