Cherry Cobbler
- 1 lb. sweet cherries
- 1 c. water
- 2 Tbsp. cornstarch
- 1 tsp. grated lemon peel
- 1/4 tsp. ground cinnamon
- sugar
- salt
- 1/3 c. flour
- 1/2 tsp. double-acting baking powder
- 1 Tbsp. salad oil
- 1 egg
- 3/4 c. whipping cream
- Preheat oven to 375u0b0.
- Save 6 cherries with stems for garnish. Remove stems and pits from all other cherries.
- In 2-quart saucepan, stir water and cornstarch until blended.
- Add cherries, lemon peel, cinnamon, 1/4 to 1/3 cup sugar (depending how sweet cherries are) and salt.
- Over medium heat, cook cherries until soft and mixture thickens and boils, stirring frequently.
- Spoon cherry mixture into custard cups.
- Mix flour, powder, oil, egg, 1/4 cup sugar and 1/8 teaspoon salt until blended.
- Spoon batter on top of cherry mixture.
- Bake 15 minutes or until top is golden.
- Serve with drop of whipping cream and garnish with cherry.
