Potato Chowder

  1. In large saucepan melt margarine.
  2. Saute onion, celery, green pepper, carrot and garlic about 3 minutes until crisp and tender. Add water, potatoes, soy sauce, thyme, basil, salt and pepper. Bring to boil, cover, simmer 20 minutes until vegetables are tender.
  3. Add tomatoes.
  4. Cover, cook 15 minutes longer.
  5. (If tomatoes are acid add sugar.)
  6. Makes about 12 cups.
