Norwegian Christmas Cake
- 6 large eggs
- sugar
- 1 c. all-purpose flour
- 1 Tbsp. cornstarch or potato flour
- 1 1/2 tsp. baking powder
- 2 to 4 Tbsp. instant coffee powder
- 1 (6 oz.) can frozen orange juice concentrate
- 2 c. heavy whipping cream
- 1 tsp. vanilla extract
- 2 medium bananas
- 1 (7 oz.) pkg. marzipan (almond paste)
- 1/2 c. fresh raspberries or raspberry preserves
- Grease bottom of a 10-inch spring-form pan.
- Preheat oven to 350u0b0.
- In a large bowl, with a mixer at high speed, beat eggs and 1 cup sugar until light and foamy, about 7 minutes.
- Stir in 1 tablespoon water.
- Add flour, cornstarch and baking powder, stirring utnil blended.
- Pour batter into a pan and bake 35 to 45 minutes until done.
- Cool cake on wire rack for 5 minutes and remove cake from pan.
