Grandma Naclerio'S Meatballs(Serving Size - Adaptable)
- 1 lb. ground chuck
- 2 eggs
- Salt and pepper to taste
- Powdered garlic to taste
- Instant parsley - enough to distribute throughout meat
- Grated cheese to taste (Parmesan & Romano 50/50 mix)
- Bread crumbs
- The above is the basic recipe and can be doubled or tripled according to need as long as the increase is in proportion to the above.
- Mix ingredients together.
- To be sure the mix is properly balanced, roll a meat ball and if it comes away from your hand but feels sticky and holds together, the bread crumb/egg balance is correct.
- Meat balls may be fried and then put in marinara sauce or fried and marinara sauce poured over them, or cooked in the marinara sauce, or eaten as is.
- Can also be made very small for hors d'oeuvres.
