Banana-Spice Cookies
- 1/2 c. margarine or butter
- 2 1/4 c. all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 1/8 tsp. ground cloves
- 1/2 c. chopped nuts
- 1 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 1/4 tsp. baking soda
- 3 bananas, mashed (1 c.)
- butter frosting (optional)
- Beat the margarine or butter with an electric mixer on medium to high speed for 30 minutes.
- Add about half of the flour, the sugar, eggs, baking powder, vanilla, cinnamon, baking soda and cloves; beat until thoroughly combined.
- Beat in remaining flour. Beat in bananas; stir in nuts.
- Drop by rounded teaspoonfuls 2-inches apart onto a greased cookie sheet.
- Bake in a 375u0b0 oven for 8 to 10 minutes or until edges are lightly browned.
- Cool cookies on rack and frost with butter frosting (optional).
- Makes 60 cookies.
