Fall Sausage Stew
- 3 Tbsp. olive oil
- 1 large onion, cut up
- 1 large zucchini, sliced
- 1 medium green cabbage, cut up
- 1 can kidney beans, rinsed
- 5 medium tomatoes, cut up
- 2 bay leaves
- 1 red bell pepper, sliced
- dill to taste
- caraway seed to taste
- salt to taste
- water as needed
- 8 oz. can tomato sauce
- 1 1/2 to 2 lb. precooked Polish sausage, cut in bite size chunks
- Heat olive oil.
- Saute onion, zucchini, cabbage, red bell pepper and tomatoes in olive oil.
- Add bay leaves, kidney beans, dill, caraway seed, Polish sausage and tomato sauce.
- Add water (about 1 cup).
- Reduce heat to simmer after stew comes to a boil. Cook on very low heat for 1/2 hour or 45 minutes.
