Old Fashioned Sweet Potato Pie

  1. Combine sweet potatoes, brown sugar, margarine, egg yolks, spices and salt in a large mixing bowl; beat until light and fluffy.
  2. Add evaporated milk; mix until combined.
  3. Beat egg whites until foamy; gradually add sugar, beating until stiff.
  4. Fold into potato mixture.
  5. Pour filling into pie shell.
  6. Bake at 400u0b0 for 10 minutes; reduce heat to 350u0b0 and bake additional 45 to 50 minutes or until set.
  7. Cool.
  8. Top with whipped cream if desired.
