Lasagna(Serves 8 To 10)
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1/4 c. chopped celery
- 1 clove garlic, crushed
- 1 lb. ground beef or Italian sausage
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 (6 oz.) can tomato paste
- 1 (1 lb. 12 oz.) can tomato sauce or puree
- 1 Tbsp. parsley
- 1 Tbsp. dried oregano
- 1 tsp. dried basil
- 12 lasagna noodles, cooked
- 1 1/2 c. Ricotta cheese
- 1 egg
- 16 oz. Mozzarella cheese, shredded
- 1 Tbsp. Parmesan cheese
- paprika
- Combine first five ingredients.
- Saute until meat is brown. Drain and return to pan.
- Add next 7 ingredients.
- Simmer for 20 minutes.
- Place layer of noodles in greased baking dish or 9 x 13-inch pan.
- Mix egg and Ricotta cheese.
- Spread 1/2 of this on noodles.
- Cover with 1/2 of sauce, then 1/2 of cheese.
- Repeat layers, ending with cheese on top.
- Sprinkle with Parmesan cheese and paprika.
- Bake at 350u0b0 for 30 minutes.
