Stuffed Flounder
- 1/4 c. onion
- 1/2 c. butter
- 1 can mushrooms (reserve liquid)
- 1 can crabmeat, drained
- 1/2 c. cracker crumbs
- 2 Tbsp. parsley
- 1/2 tsp. salt
- 8 filets flounder
- milk
- 4 oz. Swiss cheese
- 1/2 tsp. paprika
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1/4 tsp. salt
- In
- a
- skillet,
- cook
- onion in 1/4 cup of butter until tender.
- Stir
- drained mushrooms in skillet with crab, cracker crumbs,
- parsley,
- 1/2 teaspoon of salt and pepper.
- Put a few spoonfuls
- of
- this mixture on a fish filet and roll up.
- In a saucepan,
- melt
- 3tablespoons of butter;tlend in flour and 1/4 teaspoon of salt.tdd enough milk to the mushroom liquid to make 1 1/2 cups.
- Cook until thickens.
- Pour over fish and bake for
- 25
- minutes
- at
- 400u0b0.
- Sprinkle
- with
- paprika and cheese; bake for 10 minutes more.
