Raised Potato Doughnuts
- 1 c. sugar
- 1/2 c. shortening
- 1 1/2 tsp. salt
- 1 c. mashed potatoes (lukewarm)
- 2 c. milk
- 2 pkg. yeast
- 1/4 c. warm water
- 3 eggs, beaten lightly
- 1/2 tsp. lemon extract
- 1/4 tsp. cinnamon
- 8 c. flour
- shortening or salad oil
- Add
- sugar,
- shortening,
- salt and potatoes.
- Heat milk until film
- forms
- on top (DO NOT BOIL).
- Soften yeast in warm water. Let
- stand
- 5
- minutes.
- Add to milk and potatoes mixture, eggs, lemon extract and cinnamon.
- Add flour a little at a time, working smoothly into a nice dough, cover and let rise until double in bulk.
- Roll 1/4-inch and cut doughnuts and let rise.
- Fry
- in shortening
- or
- salad oil heated to 375u0b0 until golden brown.
