Raised Potato Doughnuts

  1. Add
  2. sugar,
  3. shortening,
  4. salt and potatoes.
  5. Heat milk until film
  6. forms
  7. on top (DO NOT BOIL).
  8. Soften yeast in warm water. Let
  9. stand
  10. 5
  11. minutes.
  12. Add to milk and potatoes mixture, eggs, lemon extract and cinnamon.
  13. Add flour a little at a time, working smoothly into a nice dough, cover and let rise until double in bulk.
  14. Roll 1/4-inch and cut doughnuts and let rise.
  15. Fry
  16. in shortening
  17. or
  18. salad oil heated to 375u0b0 until golden brown.
