Easy Peanut Brittle

  1. Mix sugar, light corn syrup, peanuts and salt in large, covered microwave safe dish and stir well.
  2. Microwave on high for 8 minutes, stirring halfway through cooking time. Add vanilla and butter, mix well and microwave on high again for 2 more minutes. Keep in mind that cooking times might vary, depending on the wattage of your microwave.
  3. After cooking, remove and add baking soda.
  4. Stir well until mixture becomes foamy and light in color. Immediately pour onto wax paper and use a metal knife to spread the mixture to about 1/4 inch thick. Plastic knives will melt. Wear oven mitts when cooking and handling this mixture.
  5. It is very hot.
  6. Let sit until completely cooled.
  7. Remove wax paper and break into pieces.
  8. Store in an airtight container.
  9. Makes about 1 pound.
