Savory Minestrone Soup

  1. Slice sausage into 1/4 inch pieces.
  2. Brown lightly in oil in large soup pot.
  3. Stir often to prevent sticking and burning.
  4. Add onion, garlic, carrots and zucchini.
  5. Cook for 5 minutes, stirring frequently.
  6. Add broth, soup and water and bring to a boil.
  7. Stir in beans and pasta and reduce heat to low.
  8. Simmer about 15 minutes or until the pasta is cooked.
  9. Stir occasionally.
  10. Yield:
  11. 4 to 6 servings.
