Savory Minestrone Soup
- 3/4 lb. fresh or smoked sausage
- 1 Tbsp. cooking oil
- 1 c. onion, chopped
- 1 clove garlic, minced
- 1 c. carrots, sliced
- 2 small zucchini, sliced
- 10 3/4 oz. can beef broth
- 10 3/4 oz. can Italian tomato soup
- 1 1/2 c. water
- 16 oz. can Great Northern beans (undrained)
- 1 c. bow-shaped pasta (uncooked)
- Slice sausage into 1/4 inch pieces.
- Brown lightly in oil in large soup pot.
- Stir often to prevent sticking and burning.
- Add onion, garlic, carrots and zucchini.
- Cook for 5 minutes, stirring frequently.
- Add broth, soup and water and bring to a boil.
- Stir in beans and pasta and reduce heat to low.
- Simmer about 15 minutes or until the pasta is cooked.
- Stir occasionally.
- Yield:
- 4 to 6 servings.
