Sausage 'N' Cheese Skillet
- 1 lb. hot Italian sausage (bulk or links cut into bite-size pieces)
- 1 c. onion, chopped
- 1/3 c. green pepper, chopped
- 1 clove garlic, chopped
- 1 (16 oz.) can stewed tomatoes
- 1 c. tomato juice
- 1 (4 oz.) can button mushrooms, drained
- 2 tsp. instant bouillon or 2 beef bouillon cubes
- 1/2 tsp. Italian seasoning
- 1 c. grated Parmesan and Romano cheese (1/2 c. each)
- corn chips
- In large skillet, brown sausage; drain.
- Add onion, green pepper and garlic; cook and stir until tender.
- Add tomatoes, juice, mushrooms, bouillon and seasonings; mix well.
- Simmer, uncovered, 30 minutes.
- Stir in 1/2 cup cheese; heat through. Serve with chips and remaining cheese.
- Refrigerate leftovers.
