Seafood Supreme
- 5 oz. canned lobster, drained
- 4 oz. canned shrimp, drained
- 6 1/2 oz. canned crab, drained
- 1/2 lb. scallops, fresh or frozen
- 1/2 c. butter or margarine
- 1/2 c. all-purpose flour
- 1/4 tsp. dry mustard
- 1/2 tsp. salt
- 2 c. milk
- 1 c. sour cream
- 1/2 c. sherry or white wine
- 2 Tbsp. butter or margarine for topping
- 1 c. dry bread crumbs
- 1/2 c. grated medium Cheddar cheese
- Put lobster, shrimp, crab and chicken into large bowl.
- Break up into bite-size pieces, removing cartilage.
- Cover scallops with water in medium saucepan.
- Boil 5 minutes and drain.
- Cut in half and add to bowl.
- Set aside.
- In same saucepan, melt butter.
- Stir in flour, mustard and salt.
- Add milk.
- Cook, stirring until mixture boils.
- Add sour cream and sherry or wine.
- Pour over contents in bowl.
- Stir lightly to combine.
- Pour into 2 1/2 quart (3L) casserole.
