Cajun-Spiced Shrimp With Pasta
- 2 tsp. paprika
- 1/2 tsp. cayenne
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. oregano
- 1/2 tsp. thyme
- 1 stick butter
- 2 cloves garlic, chopped
- 1 lb. fresh shrimp
- 1 (12 oz.) pkg. pasta (spirals)
- 1 small zucchini, diced
- 1/4 c. minced green onions
- 2 Roma tomatoes, diced
- 1/4 c. chopped fresh parsley (or 2 tsp. dried)
- Parmesan cheese (fresh is best)
- Combine spices and garlic in small bowl.
- Cook pasta according to package directions.
- When there is about 3 minutes left, melt 1/2 stick butter in frypan; add spices and peeled shrimp and saute until pink, about 2 to 2 1/2 minutes.
- Drain pasta.
- Melt 3 tablespoons butter in pasta pot; return pasta to pot and stir in shrimp mixture.
- Keep warm.
- Add last 1 tablespoon butter to frypan.
- Cook zucchini and green onions for 1 minute.
- Add tomatoes and parsley and cook a few seconds.
- Add to pasta and mix well.
- Serve with Parmesan cheese and a salad.
