Cinnamon Creme Stuffed Snickerdoodles

  1. For the SnickerdoodlesrnCream the butter and the sugar until light and fluffy
  2. Add the egg and vanilla and mix until incorporated
  3. Mix together the dry ingredients: flour, salt, cream of tartar, baking soda and cinnamon. Add slowly to the wet ingredients and mix until incorporated.
  4. Add in the milk. If the batter is not coming together, add more milk one tablespoon at a time
  5. Refrigerate for 30 minutes
  6. Stir together the remaining 1/4 sugar and 1 TB
  7. Create 3/4-1 inch balls of dough and roll them in the cinnamon-sugar mixture
  8. Bake for 10-12 minutes in a 375 degree oven
  9. Cool completely on a wire rack
  10. For the Cinnamon ButtercreamrnFor the frosting:rnCream the butter and light and fluffy
  11. Add in the powdered sugar
  12. Mix in the vanilla and cinnamon
  13. Stuff the Snickerdoodles with frosting until bursting
