Hot Potato Salad

  1. Boil potatoes with skins on; peel and thinly slice.
  2. Boil eggs; chop coarsely.
  3. Fry bacon slices and drain.
  4. In bacon fat, saute onion and celery until golden brown.
  5. Blend in flour, sugar, salt, dry mustard, celery salt and pepper; cook over low heat, stir until smooth and bubbly.
  6. Remove from heat and stir in water and vinegar.
  7. Bring to a boil, stirring constantly.
  8. Boil for 1 minute; crumble up strips of bacon and pour mixture over eggs and potatoes.
  9. Mix gently.
  10. Let stand until ready to serve.
  11. Sprinkle with parsley, if desired.
  12. Serves 4.
