Stuffed Green Peppers
- 1 onion, chopped fine
- 4 large green peppers
- 1 lb. ground beef or turkey
- 1/2 c. uncooked rice
- 1 c. whole tomatoes
- 1/2 c. parsley, chopped
- salt and pepper to taste
- 4 Tbsp. cooking oil
- 1 Tbsp. butter
- oregano to taste
- basil to taste
- Brown chopped onion.
- Add ground meat and continue browning. Add rice, parsley, salt, pepper, oregano and basil; stir to blend. Add canned tomatoes with liquid.
- Simmer until rice is partially cooked (10 minutes); stir constantly.
- Remove from heat and cool slightly.
- Wash peppers; slice off tops (reserve for covers). Remove seeds.
- Place peppers into boiling water and parboil for 5 to 10 minutes; cool.
- Stuff peppers with filling and place in a deep pot.
- Add boiling water to cover peppers 3/4 way up.
- Add tablespoon of butter; cover and cook over low heat until rice is tender, about 30 minutes.
- Serves 4.
