Stuffed Green Peppers

  1. Brown chopped onion.
  2. Add ground meat and continue browning. Add rice, parsley, salt, pepper, oregano and basil; stir to blend. Add canned tomatoes with liquid.
  3. Simmer until rice is partially cooked (10 minutes); stir constantly.
  4. Remove from heat and cool slightly.
  5. Wash peppers; slice off tops (reserve for covers). Remove seeds.
  6. Place peppers into boiling water and parboil for 5 to 10 minutes; cool.
  7. Stuff peppers with filling and place in a deep pot.
  8. Add boiling water to cover peppers 3/4 way up.
  9. Add tablespoon of butter; cover and cook over low heat until rice is tender, about 30 minutes.
  10. Serves 4.
