Louisiana Dirty Rice
- 2 Tbsp. flour
- 1 c. onion, chopped
- 1 c. celery, chopped
- 1/2 c. green pepper, chopped
- 2 cloves garlic, minced
- 1/2 lb. ground beef
- 1/2 lb. ground pork
- 1/2 lb. chicken giblets, chopped
- 2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 tsp. red pepper
- 1 c. chicken broth
- 3 c. cooked rice
- 1 c. sliced green onion tops
- 2 Tbsp. vegetable oil
- Brown flour in oil until it is a deep red-brown, stirring constantly to prevent burning.
- Add onions, celery, green pepper and garlic; cook until tender.
- Stir in beef, pork, giblets and seasonings.
- Continue cooking until meat loses it's color.
- Blend in broth; cover and simmer 25 minutes.
- Stir in rice and onion tops.
- Cook 5 minutes longer.
- Mixture should be slightly moist. Makes 6 servings.
- Rice can be placed in baking dish and served later, 350u0b0 for 30 minutes, covered.
