Fried Chicken
- 2 1/2 lb. frying chicken (pieces)
- 1 c. all-purpose flour
- 2 tsp. salt
- 1 tsp. paprika
- 1/2 tsp. pepper
- 2 eggs
- 2 Tbsp. water
- 1/2 tsp. garlic powder
- 1/2 tsp. ground oregano
- 1/4 tsp. cayenne pepper
- 2 c. shortening
- Rinse chicken and pat dry.
- Combine flour, paprika, salt and pepper in a plastic bag.
- Combine garlic powder, oregano and cayenne in shaker.
- Heat shortening to 375u0b0 in a heavy deep skillet.
- Beat eggs in water.
- Shake chicken a few pieces at a time in flour mixture to coat.
- Dip in egg mixture, then shake again in flour mixture.
- Fry for 10 minutes, skin side down, turn and fry for 20 minutes, turning occasionally.
- Remove and drain on paper towels.
- Sprinkle with spice mix.
