Crawfish Casserole
- 1 stick margarine
- 1 c. chopped onions
- 1 c. green peppers
- 1 c. chopped celery
- 2 cloves garlic
- 1/3 c. chopped parsley
- 1 c. chopped green onions
- 1 small jar pimentos and juice
- 1 can cream of mushroom soup
- 1 can Cheddar cheese soup
- 3 c. crawfish, shrimp or crab
- 2 c. cooked rice
- 1/4 c. and 1 Tbsp. Italian bread crumbs
- 2 Tbsp. hot sauce
- 1 tsp. black pepper
- 1 tsp. salt
- Cook onions,
- peppers,tarlic and celery until tender; simmer intutter.
- Add soups, parsley, green onions, crawfish and pimento, chopped; heat thoroughly.ttir in rice and bread crumbs. Turn
- into
- 3 quart casserole.
- Sprinkle bread crumbs and bake at 350u0b0

- minutes
- or until bread crumbs are brown.
