Glazed Meat Loaf
- 3 Tbsp. unsalted butter
- 1 large onion
- 2 small carrots
- 1 large celery stalk
- 2 cloves garlic
- 1 tsp. dried thyme
- 2 Tbsp. dark brown sugar
- 1 Tbsp. cider vinegar
- 1/2 c. bottled chile sauce
- 2 Tbsp. Dijon mustard
- 2 large eggs
- 1/2 c. dried bread crumbs
- 3/4 tsp. black pepper
- 3/4 tsp. salt
- 1 1/2 lb. lean ground beef
- 1/2 lb. lean ground pork
- Dice onion, celery and garlic; peel and dice carrots and 1 teaspoon dried thyme, crumbled.
- Cook veggies until tender.
- Mix next four ingredients and save 1/2 for top.
- Mix other ingredients and add veggies and 1/2 sugar mixture.
- Top with remaining sugar mixture.
- Bake in two small loaf pans and bake at 350u0b0 about 1 hour or until done.
