Sweet-Sour Pork
- 1 1/2 lb. lean shoulder pork, cut in strips 2 x 1/2-inch
- 2 Tbsp. fat
- 1/4 c. water
- 1/4 c. brown sugar
- 2 Tbsp. cornstarch
- 1/2 tsp. salt
- 1/4 to 1/3 c. vinegar
- 1 c. pineapple juice
- 1 Tbsp. soy sauce
- 3/4 c. green pepper, cut in strips
- 1/4 c. thinly sliced onions, cut in strips
- 1 (No. 2) can pineapple chunks
- Brown pork slightly in hot fat.
- Add water; cover and cook slowly 1 hour.
- Combine brown sugar, cornstarch, salt, vinegar, pineapple juice and soy sauce.
- Mix. Cook until slightly thick, stirring constantly.
- Pour over hot, cooked pork.
- Let stand 10 minutes.
- Add green pepper, onion and pineapple chunks and cook only 2 or 3 minutes.
- Serve with hot fluffy rice.
- (Chinese noodles are good with it, too.)
