Healthy Turkey Chili
- 1 cup black beans
- 1 cup white kidney beans
- 1 cup pinto beans
- 1 cup red kidney beans
- 3 cups diced fresh tomatoes
- 1 quart chicken stock
- 1 pound ground white meat turkey
- 1 pinch cumin seeds
- 1 tablespoon ground coriander
- 1 teaspoon pink salt
- 1 sprig chili powder
- 1 diced jalepeno
- 1 teaspoon cornstarch
- 3 cups purple hominy
- 3 tablespoons olive oil
- 1/2 cup diced red onion
- 1 teaspoon garlic powder
- 2 cups water
- brown the turkey in 3 tablespoons of olive oil
- add red onion, cumin seeds, coriander, chili powder, garlic powder, salt, and diced tomatoes saute for about 5 min
- add hominy,all beans,chicken stock, and cornstarch mixed into water, and heat
- chop in jalapeno, and salt to taste
