Beef And Potato Bake
- 1 medium onion, thinly sliced
- 1 c. thinly sliced carrots
- 2 medium potatoes, peeled and thinly sliced
- 2 Tbsp. chopped bell pepper
- 3/4 tsp. salt
- 1/8 tsp. pepper
- 1 (10 3/4 oz.) can cream of mushroom soup
- 1/4 c. quick cooking rolled oats or bread
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 lb. lean ground beef
- 1 Tbsp. prepared mustard
- snipped parsley or dried parsley flakes
- Combine carrots, potatoes, onion, bell pepper, 3/4 teaspoon salt and first 1/8 teaspoon pepper.
- Add 1/2 of the soup, bread crumbs (oats) and the other salt and pepper.
- Add meat.
- Mix well. Form into a loaf.
- Place atop vegetables.
- Bake, covered, at 350u0b0 for 1 1/4 hours.
