Chili
- 2 lb. meat, ground beef or stew or mix both
- 1 c. green pepper
- 28 oz. stewed tomatoes
- 15 oz. tomato sauce or 6 oz. tomato paste with water
- 10 1/2 oz. beef broth
- 2 to 4 tsp. chili powder or up to 3 Tbsp.
- 1/4 tsp. oregano
- 1/4 c. ketchup
- 2 1/2 tsp. salt or Lawry's seasoned salt
- 1 c. onion, diced
- 2 Tbsp. oil
- 2 small cloves of garlic, or to taste
- 1 1/2 c. beer or water (beer preferred)
- 4 oz. green chilies, undrained
- 1 to 3 tsp. cumin (1 Tbsp.)
- 1/4 to 1/2 tsp. cayenne (red pepper)
- 1/4 tsp. cinnamon
- 1 Tbsp. Worcestershire sauce
- 2 (15 1/2 oz.) kidney beans, undrained*
- Brown onions, green pepper, garlic and meat, then add beans and balance of ingredients in Dutch oven.
- Simmer 1/2 hour and serve.
